This is a simple Italian soup. Some people call it Italian Wedding Soup, and others know it as Zuppa Del Giorno Soup, It’s so delicious and made with lots of vegetables with some spices, which makes it a perfect choice for light dinners sometimes.

What I noticed about Zuppa Del Giorno Soup is that everyone makes it in their own way, with their own touch. For example, I’ve seen some people use different vegetables, and some even replace the pasta. Yes, this soup includes pasta, with meat like chicken, which is fine for me at least. But I did my best to make it as traditional as possible.

I used the vegetables I had at the moment. Just so you know, this recipe was made last Friday, so I used carrots (one of my favorite veggies, especially in soups), celery, potato, and some green beans. For pasta, I used ditalini as I love it, and I also added some cooked cannellini beans. Of course, I used lots of spices with it, the best one being garlic for sure.

The taste was cozy and really comforting. I highly recommend this soup, especially in the winter, so be sure to save it for later.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 medium potato, peeled and cubed
  • 1 zucchini, diced
  • 1 cup green beans, chopped
  • 1 can (14 oz) diced tomatoes
  • 6 cups vegetable or chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1/2 cup small pasta shapes (I used ditalini)
  • 1/2 cup cooked cannellini beans

How to Make Zuppa Del Giorno Soup?

Step 1:

Heat the olive oil in a big pot on the stove. Put in the chopped onion and garlic. Cook them slowly for 3 to 4 minutes.

Step 2:

Add the carrots, celery, and potato pieces to the pot. Stir everything and cook for 5 more minutes.

Step 3:

Now, pour in the chopped tomatoes and the broth. Put in the oregano and basil. Stir well and let the soup boil. When it boils, turn the heat down low and let it cook slowly for 15 minutes.

Step 4:

After 15 minutes, add the zucchini, green beans, and pasta. If you have beans, add those too. Stir and cook for 10 more minutes.

Step 5:

Taste the soup. If it needs more flavor, add some salt and pepper. Turn off the heat and sprinkle fresh parsley on top if you want and enjoy.

I love having my Zuppa Del Giorno Soup with some Tomato and Tuna Pasta, which I actually made on the same day using ditalini pasta too. It turned out to be a perfect choice for the soup. You can also serve it with some garlic or basil bread, some roasted sweet potatoes, or A few slices of bruschetta topped with tomatoes and basil for more Italian flavors. And don’t forget dessert. I served some soft Pandan Cookies to my family after dinner, and it made the full meal and experience so special and enjoyable for everyone.
