I know I’ve been absent for a long time. I think my last recipe was a month ago, which was the Aloha Chicken Sausage. I really loved that dinner! Now I’m back to share this Santiago’s Green Chili Recipe, a nice, warm green chili just like the one you can get at Santiago’s restaurant.

I made this copycat version of Santiago’s Green Chili because all my chili recipes turn out so good and delicious, so I feel like I have the experience needed for a recipe like this, plus I enjoyed making this type of meal.

The one I tasted at the restaurant was delightful, so it made me want to search for a way to make a homemade version.

For the ingredients, I used about 2 pounds of pork shoulder, but you can use more or less depending on you’re serving. For me, I only enjoy it with my wife, so that was enough.

The rest of the ingredients are mostly spices and just a few vegetables, such as onions and tomatoes.

Also, I did my best to keep it as simple as possible. It’s not different from other chili recipes that you usually make, so it’s not hard at all.

INGREDIENTS

  • 2 pounds pork shoulder, trimmed and diced into small cubes
  • 2 tablespoons vegetable oil
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 2 cups roasted green chilies, chopped (mild or hot, your choice)
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1/2 teaspoon cumin
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon crushed red pepper flakes (optional, for extra spice)

How to Make Santiago’s Green Chili?

Step 1:

Heat a large pot over medium-high heat and add the vegetable oil. Now, place the cubed pork into the pot and cook it.

Step 2:

Add the chopped onion to the pot with the pork and stir it around. Let the onions cook until they become soft; I think 4-5 minutes is enough.

Step 3:

Now, sprinkle the flour over the pork and onions. Stir everything so that the flour covers all the pieces.

Step 4:

Slowly pour in the chicken broth while stirring. Then add your chopped green chilies and diced tomatoes with green chilies. Give it all a big stir so everything is mixed up.

Step 5:

Add the cumin, oregano, salt, black pepper, garlic powder, onion powder, and stir again to mix the spices throughout the chili.

Step 6:

Finally, turn the heat down to low, put a lid on your pot, and let the chili simmer for about 1 hour. Don’t forget to check it every now and When the pork is tender, then you can enjoy it.

What to Serve with Santiago’s Green Chili?

Just like all my chili recipes, I love enjoying this type of dinner with some crunchy tortilla chips and creamy guacamole, it’s the perfect match for me each time I make it. You can also serve your Santiago’s Green Chili over some white rice or even inside a burrito.
