Chicken Carciofi
Last weekend, my wife asked if I knew any new chicken recipes besides the ones I usually make. I know quite a few, but we were in the mood for something new and different. So Chicken Carciofi came to mind, I had seen it earlier that week in my Italian cookbook. I liked the picture, but I didn’t pay close attention to the details or ingredients at the time.

So I decided to take a closer look and get serious about making this Chicken Carciofi. I was surprised to learn that the word “Carciofi” means “artichokes” in Italian. That made it even more interesting for me because I don’t use artichokes often in my cooking.
The dish is based on chicken and artichokes with a delicious lemon garlic sauce. So, I used chicken breasts for this recipe and did my best to make the garlic sauce really good because I knew it would play a big role in the overall taste of the dish.
The taste was as I expected of this Chicken Carciofi, so good, tangy, and creamy. I loved it, especially when I enjoyed it with Panera’s Tomato Basil Bread, which I always have ready in my kitchen.

INGREDIENTS
- 4 boneless, skinless chicken breasts
- 1 (14-ounce) can artichoke hearts, drained and halved
- 1/4 cup all-purpose flour
- 2 tablespoons olive oil
- 3 tablespoons butter
- 4 garlic cloves, minced
- 1/2 cup dry white wine (or chicken broth if you prefer)
- 1/2 cup chicken broth
- Juice of 1 lemon
- 1 teaspoon lemon zest
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)

How to Make Chicken Carciofi?
Step 1:
First, put the chicken between two pieces of plastic wrap and press it flat with a rolling pin.
Step 2:
Put some flour on a plate and roll the chicken in it to give it a nice crispy outside when it cooks.
Step 3:
In a big pan, heat up some oil and a little butter. Cook the chicken for 4-5 minutes on each side, After that. Then take it out and set it aside.
Step 4:
In the same pan, add more butter and the chopped garlic. Stir for 1 minute until it smells really good.
Step 5:
Pour in some white wine or chicken broth and stir the bottom of the pan. Let it for 2-3 minutes.
Step 6:
Now add more chicken broth, lemon juice, lemon peel, and oregano. Stir it all, then add the artichokes and the chicken back to the pan.
Step 7:
Let it all cook together for 5-6 minutes so the sauce gets a little thick.
Step 8:
Sprinkle on a little salt and pepper. Add then enjoy.

Besides my Panera Tomato Basil Bread, which is always a favorite, I also love serving this Chicken Carciofi with some grilled pickles on the side, You can also enjoy it with a side of creamy mashed potatoes as my wife loves it, And if you think for something more Italian, garlic parmesan risotto or even polenta will makes a nice hearty match.
