I was craving something sweet the other day, and this is what came out of the whole desire for a dessert. A super easy-to-make apple pancake. I really don’t know if it’s an actual pancake or not, but I’ll just call it that way because I used a pan to cook it.

I don’t know if you know this, but I’m not really good with the whole baking and making desserts thing. I’m actually a bit afraid of the concept because you need to be really careful with the amounts and times, and to be honest, that’s just not me. I like to add a little bit of this and a little bit of that, and with desserts, that’s not always a good thing to do.

But, I have to say I’ve enjoyed this recipe A LOT! I don’t know why, but tossing the apples while cooking them and seeing how they caramelize and how they spread an amazingly mouth-watering smell all over the house was just a joy. Then, watching the batter growing in the oven and taking that brown, beautiful color. Just lovely.

What about the taste I hear you say? Oh, it was all there! Like Graham Elliot would say: “it’s like sex in your mouth”. Believe me, you’ve got to try it.

Apple Pancake

INGREDIENTS

  • 50 g of butter
  • 3 apples, peeled, cored, and sliced
  • 3 tablespoons of brown sugar
  • ½ teaspoon of cinnamon
  • 3 large eggs
  • ½ cup of milk
  • 2 tablespoons of flour
  • ¼ teaspoon of baking powder
  • Powdered sugar for dusting

How to Make This Apple Pancake?

Step 1:

Preheat your oven at 190ºC / 375ºF. In a small bowl combine the brown sugar and the cinnamon.

Step 2:

Take a large bowl and whisk together the eggs and the milk. In another bowl mix together the flour and the baking powder. Gently whisk the powdered mixture into the egg/milk mixture. This will form the batter for the pancake.

Step 3:

In a skillet or an oven proof pan, melt the butter, then add the apple slices and 1 tablespoon of the brown sugar/cinnamon mixture and cook for about 4 to 5 minutes, until soft, stirring or tossing frequently.

Step 4:

When the apples are nice and soft and just a bit caramelized pour the batter over them and sprinkle the remaining brown sugar on top.

Step 5:

Transfer the skillet/pan into the oven and bake until it puffs up, about 20 minutes. Keep an eye on it though so it doesn’t burn.

Step 6:

After you get the pancake out of the oven dust it with powdered sugar and let it cool for 5 minutes, then serve.

Helpful Tips!

  • For the apples used, I love to use Fuji, and sometimes I use Honeycrisp. of course, this is optional, Any apple can be good for this recipe.
  • Remember to keep your eye on the oven and check the pancake after 10 minutes.
  • You can add any other topping to your pancakes. For the kids, They love to add some whipped cream or honey to make the meal sweeter.

What to Serve With this Apple Pancake?

This Apple Pancake is so delicious, but you can pair it with some other sides and drinks. I will start with whipped cream, as the kids love it a lot. For me, sometimes, and even my wife, we love to drizzle maple syrup on top, and also we love to have a slice with a Pineapple Kiwi Yogurt Parfait. For some drinks, a cup of hot tea is enough for me, or you can have it with a warm apple cider. Also, smoothies can be good.

Can I use a different type of fruit?

Yes, you can try this recipe with pears, peaches, or even bananas instead of apples.

Can I make this recipe without an ovenproof pan?

If you don’t have an ovenproof pan, you can cook the apples in a regular skillet and then transfer them to a baking dish before adding the batter and baking.

Is this recipe gluten-free?

No.

Can I use white sugar instead of brown sugar?

Yes, you can use white sugar if you want.

How do I store leftovers?

Store any leftovers in an airtight container in the fridge for up to 4 days.

Can I double the recipe?

Just use a larger skillet and double all the ingredients.
